  1. Place quinoa in 1 cup salted water over medium heat and bring to boil.
  2. Reduce to a simmer for 10 to 15 minutes, or until tender and the liquid is absorbed. While the quinoa cooks, prepare the squash salad.
  3. Cut squash into 1/4 inch thick slices.
  4. Thinly slice red onion.
  5. Toss squash and red onion with lemon juice, olive oil, and salt and pepper to taste.
  6. Top with quinoa and feta.
  7. Enjoy your squash salad!
