I know I’m late in the season for a squash salad recipe, but so what? We’ve all convinced ourselves “in season” is irrelevant anyway. Have I ever mentioned I lived in Spain for a summer before? Well, I did. I always remember my college Spanish professor telling us Americans were crazy because we buy the same fruit and vegetables all year round, and you know what? I really couldn’t find off-season items when I was in Madrid. We just ate the summer stuff. And funny-named American food, of course. There’s nothing like Cool American Doritos. Anyway…

This summer, I hosted a rainbow themed dinner party. The point was to serve a different colored dish for each course, and going in order meant salad had to be… yellow. Could I have made it easy on myself and switched it to green? Sure. But that’d be very unlike me. Instead, I scoured the internet high and low to find a yellow salad. I came across this one from Martha Stewart, the queen hostess, and decided to use it. Then I started to think, dang, this is kind of a boring squash salad. Like, it’s just squash. So, I had to jazz it up a bit. Quinoa is pretty easy choice for a go-to, and feta’s obvious, so I’m not super creative here, but hopefully you’ll enjoy it anyway!

Instructions
  1. Place quinoa in 1 cup salted water over medium heat and bring to boil.
  2. Reduce to a simmer for 10 to 15 minutes, or until tender and the liquid is absorbed. While the quinoa cooks, prepare the squash salad.
  3. Cut squash into 1/4 inch thick slices.
  4. Thinly slice red onion.
  5. Toss squash and red onion with lemon juice, olive oil, and salt and pepper to taste.
  6. Top with quinoa and feta.
  7. Enjoy your squash salad!

  1. I love the idea for this recipe and the combination of flavours, super easy to make vegan too if I just use vegan feta 🙂

    I live in Spain and we always buy from local farms so a lot of vegetables aren’t available at different times of the year. It’s always better to eat when a vegetable can grow in natural conditions so I’ll be making this as soon as squash becomes available in my local farm!
